Quinoa is an ancient grain considered to be sacred to the Inca Empire and known as the “mother of all grains”. It is higher in fiber than most grains and is a very good source of manganese, phosphorus, copper, magnesium, folate and zinc.
Preparation: Rinse well and add 1 cup grain to 2 cups of boiling spring water. Lower heat and simmer for 10-15 minutes until all water is absorbed. Serve hot or cold.
